I was sitting here scrolling trough my emails and I glanced down at the date in the corner of my screen. Hmmm not long until I leave Australia, how much food is left in the pantry?
I recalled buying a 1kg packet of dried fruit some months ago and having done nothing with it. I checked my freezer and saw a 1/2kg of sausage mince and a few sheets of puff pastry. No, I am not going to create a new dish with these two main ingredients. As is a habit with me, I like to bake multiple things at once to save power. (I have a very old juice guzzling electric oven.) So I was thinking about making some sausage rolls and a boiled fruit cake at the same time.
The sausage rolls would be a piece of cake as I make them quite often but the boiled fruit cake was another matter entirely.
I searched the net for a recipe and was disappointed to note that I did not have all the required ingredients. Another search brought up a four ingredient cake which caught my attention. It advocated soaking the fruit in three cups of black tea overnight and then mixing flour and spices. Jeez I have gone from one extreme to the other. I do not like tea, so this recipe was out the door quicker than it came in hahaha.
Back to my search. Yes, if you persevere it is possible to find a solution for most things. I found a recipe that I could adapt and then went hunting down the ingredients in my pantry. I didn’t have all of them but figured I had enough to at least try.

Is that a blurry pic? I’m not sure because my eyes are getting old and fuzzy hahaha.
Now onto the sausage rolls. I usually mix 50/50 sausage meat and beef mince but I only had sausage meat in the freezer. A few herbs and bread crumbs mixed with one egg and onto the pastry. This is a simple recipe that I made up myself.
I ran out of mixture on the last sheet and substituted a real sausage. I think mine will taste the best.
So in the oven with the fruit cake and wait patiently. It is way past lunchtime now and I am getting extremely hungry. It is starting to smell great. I can’t wait.
So here we have the final results. Looks great for an old bloke.
